Executive Head Chef
Chef Matt Chen was born in Macau and began his culinary career at the age of 14, training under his uncle, who served as a head chef at the Chinese restaurant of Hotel Lisboa Macau. In 2000, he joined the Humble House Group, where he spent 17 years working across its distinguished Cantonese restaurants, including My Humble House, Sukhothai at Sheraton Grand Taipei Hotel and Le Méridien Taipei.
In 2017, Chef Matt Chen was invited to serve as Executive Chef of Le Palais at Palais de Chine Hotel. Beginning with the inaugural Michelin Guide Taipei in 2018, he led the restaurant to retain three Michelin stars for five consecutive years. This achievement made him the first chef in Taiwan to lead a restaurant to Michelin three-star recognition and established his international reputation as a distinguished master of Chinese cuisine.
Driven by a vision to bring truly exceptional Chinese cuisine to North America, Chef Chen seeks to share the depth and refinement of his culinary heritage with a wider audience. Through meticulous craftsmanship and carefully selected ingredients, he elevates traditional Chinese flavors, offering guests a sophisticated expression of Chinese fine dining while showcasing its rich culinary artistry on the international stage.

In July 1971, Premier Zhou Enlai served Quanjude’s signature roast duck to U.S. Secretary of State Henry Kissinger, the special envoy of President Nixon, during his historic visit to China.
At Quanjude’s Beijing Duck House, Premier Zhou Enlai and President Richard Nixon opened a new chapter in U.S.-China relations, setting the stage for a historic diplomatic exchange over a shared appreciation of culinary tradition.
